AOC Minervois

  • Grape varieties :

    60% Syrah – 40% Grenache

  • Soil :

    The 2 hectares of vineyards planted in a chalky-clay terrace (situated in Bagnoles hills) are overhanging Carcassonne city.

  • Tasting notes :

    Intense red colour.
    Nose both spicy and fruity with typical grapefruit perfume from our “terroir”.
    Roundness in mouth is characterised by a good balance between acidity and smoothness.
    Pepper and citrus fruits aromas with long finish.

  • Vinification :

    Treading – Destemming. Maceration in tank under regulated temperature about 25°C, 30°C at the end of maceration process.
    Traditional winemaking in tank with daily devatting in the early stage of fermentation.

  • Serving suggestions :

    This powerful and noble wine goes perfectly with delicatessen food, meats and ripe cheeses.
    Serve at 18°C.
