AOC – Minervois la Livinère

Description :

Quaternary terraces and altitude areas of The Petit Causse with chalky soil enjoying a semi-arid Mediterranean climate with wild winters.

Vinification :

Plots of selected Syrah and Grenache. Harvest at optimal maturity. Destemming of all grapes. Short winemaking (5-6 days). Daily crushing with fermenting temperature controls. After devatting and pneumatic pressing, wines are kept in air-conditioned wineries. Bottling : 18 months oak aged.

Tasting notes :

Nice intense red color with ruby hints. Red berries aromas. Silky and round in mouth with spicy finish.

 

Serving suggestions :

Slightly chilled, it will go with grilled red meat and mature cheese.

Serve at 18-20°C.
